1 tbsp butter
5 cups rolled oats
2 cups packed brown sugar
4 tsp baking powder
2 tsp salt
4 eggs
2 cups heavy cream
1 cup unsalted butter, melted
1 tbsp pure maple syrup
1 tsp honey
1 cup pomegranate seeds
Preheat oven to 350 degrees. Grease a 3 quart baking dish with the 1 tbsp butter. In a very large bowl, combine oats, brown sugar, baking powder and salt. In another bowl, lightly beat eggs. Whisk in cream, melted butter, maple syrup and honey. Add to oat mixture and stir to combine. Spoon into the prepared baking dish. Bake, uncovered, 45-50 minutes, or until golden brown and a toothpick inserted near the center comes out clean. Sprinkle with pomegranate seeds.
