SCRUMPTIOUS MAPLE SYRUP AND ALMOND GRANOLA



4 cups old-fashioned rolled oats

1 ½ cups raw almonds

1 cup raw pumpkin seeds

1 cup unsweetened coconut chips

1 cup pure maple syrup

½ cup olive oil

½ to 1 tsp salt

½ tsp ground cinnamon

½ tsp ground cardamom

¾ cup chopped dried apricots


Preheat oven to 300 degrees. In a large bowl or in a large roasting pan with about 4 inch sides, combine all ingredients except apricots. Spread mixture evenly in pan and bake for about 45 minutes, being sure to stir every 10 minutes until golden brown and well toasted.

Cut up apricots while the rest of the granola is roasting. When granola is done roasting, add chopped apricots. Eat as a snack or for breakfast.
